Samosa Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 4 tbsp oil (for dough)
  • ½ tsp carom seeds (Ajwain)
  • Salt to taste
  • Water (for kneading)
  • 4 medium-sized boiled potatoes
  • 1 cup green peas (optional)
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1 tsp amchur (dry mango powder)
  • 1 tsp ginger (grated)
  • Oil for frying

Instructions:

For the Dough:

  1. Mix flour and spices: In a bowl, add flour, salt, carom seeds, and 4 tbsp of oil.
  2. Knead dough: Gradually add water and knead into a firm dough. Cover and set aside for 30 minutes.

For the Filling:

  1. Mash the potatoes: Peel and mash the boiled potatoes in a bowl.
  2. Prepare the spices: Heat oil in a pan, add cumin seeds, then add green peas, ginger, coriander powder, garam masala, red chili powder, and amchur.
  3. Mix with potatoes: Add the mashed potatoes to the spices, mix well, and cook for 2 minutes. Let the filling cool.

For the Samosa:

  1. Roll the dough: Divide the dough into equal balls, roll each ball into a small circle, and cut it in half.
  2. Shape the samosa: Take one half, fold it into a cone shape, and seal the edges with water.
  3. Fill the cone: Add the potato filling into the cone, then seal the top.
  4. Fry: Heat oil in a deep pan and fry the samosas on medium heat until golden brown.

Serve: Enjoy hot samosas with tamarind or mint chutney!

Fresh Coriander – 1 cup (chopped)
Fresh Mint Leaves – 1/2 cup (optional)
Green Chilies – 2-3 (adjust to taste)
Lemon Juice – 1 tbsp
Ginger – 1 inch piece
Cumin Powder – 1/2 tsp
Salt – to taste
Water – as needed

Instructions:

Wash and prepare ingredients: Clean the coriander, mint leaves, and green chilies.
Grind everything: In a blender, add coriander, mint, green chilies, ginger, cumin powder, and salt.
Add lemon juice: Squeeze lemon juice into the blender.
Blend: Add a little water and blend until smooth.
Adjust consistency: Add more water if needed to get the desired consistency.
Taste and adjust seasoning: Adjust salt or lemon juice as per your taste.
Serve fresh: Serve with hot samosas.
